Combine water, 1tbsp sugar, 1tbsp flour and yeast and leave to rise. Warm butter and milk in a small pot. Beat eggs, 1 cup sugar, 1 cup flour, salt, and orange zest. Add in the milk/butter mixture and the yeast mixture from above. Add 2 cups flour, beat well. Add remaining flour and raisins (or craisins) and beat well. Turn this into a large bowl and let it rise for about an hour. Knead it down and let it rise for another hour. Cut it into 4 parts and put each into a loaf pan. Let rise for 30 minutes, brush with slightly beaten egg white and sprinkle with crumb mixture. Let rise for 30 more minutes. Bake at 350F for 30 to 35 minutes until finished. Alternate instead of a loaf pan and crumb mixture: Cut into thirds and roll each 1/3 out into 1/8" thick. Brush with melted butter and sprinkle with cinnamon and walnuts (optional). Roll this up and place into a pie tin or cake pan in a ring shape. Snip top 2 layers about every inch around the ring. After baking, let it cool and lightly ice with glaze.
Mix vanilla and milk, add to powdered sugar. Mix well. Add add'l milk, one tablepoon at a time until desired consistency. Go easy, it does not take much!

Mix powdered sugar, salt and vanilla. Mix in butter. Add milk teaspoon by teaspoon until desired consistency.
